Birthday Cooking Class

For my birthday I wanted to do a cooking class with some friends.  My friends Rachael and Heather did all the planning and it turned it so fun!  We had a signature cocktail, a few appetizers and then we made a salad and a pasta dish for the main course and Heather did an ice cream sundae bar for dessert.

It was a great night!  I picked the main entree which was Ina Garten’s rigatoni with sausage and fennel.

We had the party/class at Heather’s House.  She is an amazing cook and has the best house for parties.

Every party needs a signature drink so Rachael made a signature cocktail for me.  It was a Rasberry Cosmo.  She made it with fresh raspberry purรฉe, vodka and raspberry liquor.

Heather made homemade bread which was so amazing!

It was honestly so fun to get together and cook with my friends.  I really love doing that.  Everyone pitched in and helped with the cooking.  We made a citrus and beet salad and the rigatoni together.

And of course we took lots and lots of pictures.

For dessert Heather had a sundae bar including homemade lemon sorbet.   She gave me the recipe for the sorbet and I am going to make it soon.  It was so delicious!

Here is the pasta recipe we made

Rigatoni with sausage and fennel

3 tablespoons good olive oil
3 cups chopped fennel (1 large bulb)
1 1/2 cups chopped yellow onion
1 1/4 pounds sweet Italian sausages, casings removed
2 teaspoons minced garlic (2 cloves)
1/2 teaspoon whole fennel seeds, crushed with a mortar and pestle
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 cup dry white wine
1 cup heavy cream
2/3 cup half-and-half
2 tablespoons tomato paste
1 pound rigatoni
1/2 cup chopped fresh parsley leaves
1 cup freshly grated Italian Parmesan cheese, divided

Heat the olive oil in a large heavy pot or Dutch oven, such as Le Creuset, over medium heat. Add the fennel and onion and saute for 7 minutes, stirring occasionally, until tender. Add the sausage and cook for 7 to 8 minutes, crumbling it with a fork, until nicely browned. Add the garlic, crushed fennel seeds, red pepper flakes, 2 teaspoons salt, and 1 teaspoon black pepper and cook for one minute. Pour in the wine, bring to a boil, and add the heavy cream, half-and-half, and tomato paste. Bring back to a boil, lower the heat, and simmer for 20 minutes, until the sauce has thickened.

Meanwhile, bring a large pot of water to a boil, add 2 tablespoons salt, and cook the rigatoni according to the directions on the package. Drain and add to the sauce, stirring to coat the pasta. Cook over low heat for 5 minutes to allow the pasta to absorb the sauce. Off the heat, stir in the parsley and 1/2 cup of the Parmesan. Serve hot in shallow bowls with the remaining 1/2 cup Parmesan on the side.

The party  was perfect.  Heather was a great teacher and it was so fun to cook together. This cooking party was a fabulous way to celebrate turning 42!

15

Yesterday our Ava turned 15! She brings so much joy and  love to our family and I'm thrilled we had a day to celebrate her.

This weekend was full of activities so we celebrated with a quick trip to the new Five Guys that opened up in our town.  Ava loved it!

All day Saturday and half of Sunday Ava had an overnight retreat to get ready for her Rotary youth exchange.  She had to introduce herself and give a greeting in Czech during the retreat.  She practiced so much and I was thrilled when she texted us to let us know that she did her introduction in front of the whole group.

Ava also had  two basketball practices yesterday afternoon and evening.  Her afternoon practice was for AAU and her evening practice was for an  all section game that she'll be playing in this week.

We love our girl so much and I can't believe she's 15!

Our weekend

This weekend was the perfect weekend it was a balance of fun and work and friend time and family time.  It was a great weekend!!!

Friday was G's birthday!  He doesn't like to make a big fuss over his birthday and he wanted dinner at home so that's exactly what we did.  We had a quiet dinner at home before we went to Ava's basketball game.

Friday night Ava had a game.  I always love watching her play.  She plays her heart out each and every game.    Her team played a tough team and they lost :-(. Ava's friend M took some pics of her during the game.  I am so grateful to her because she captures some great shots ❤๐Ÿ€

Saturday I woke up bright and early to go snow tubing with my friends for my annual joint birthday party with my dear friend Jenni.  This is our fourth year doing a joint party.  The first year went  bowling, the second year we went to a trampoline park, last year we had a fabulous 40th birthday trip to Cooperstown and this year we went snow tubing at Hunter mountain.

Here's a collage from previous years ❤

And here we are this year๐Ÿ‘๐Ÿผ❤. Don't mind my sweaty head ๐Ÿ˜ฌ. We took this pic after tubing and it was quite a warm day on the slopes-50 degrees.

Here we are on top of the mountain ready to tube.  As you can see there was NO snow so thankfully they make their own.

Anne (our exchange student from Denmark) came with me and she skied while we went tubing.  Sadly Ava couldn't go she had basketball practice in the morning and then a game in the afternoon.

We had lunch in the lodge and then headed home. It was a gorgeous day!

We raced home after lunch so I could get to Ava's basketball game at 4.  She played good and her team won!  Yay!!!!!!!!

Sunday I went to see The movie Jackie with some friends.  I'm trying to see all the movies that were  nominated for an Oscar. The movie was done very artistically and focused on Jackie during the first few days  after the assasination.  It was tragically sad.  Honestly I didn't love the movie but Natalie Portman was fantastic in her role as Jackie  I was happy to hear this morning that she was nominated for an Oscar!

After the movie I raced over to our new (tiny) house and helped G clean up a bit because we have tenants moving in on Saturday for three months.

We bought a new sectional for the tiny house and I love it!

Here's a picture of the kitchen.  I adore the white cabinets.

Our plan is to move into the tiny house in May and rent our house out as a baseball rental in the summer.  We already have 11 out of 12 weeks booked-yay!!!  We would like to stay in the tiny house next year while Ava is abroad since its in town and so much closer to our work.  I'm praying our current house gets rented for next year so we can live at the tiny house.

I hope you had a great weekend.

Birthday fun!

My birthday was Friday and we have spent all weekend celebrating which has been so great!

The party started at lunch on Friday with my girlfriends.  We went to a good Italian place and everyone ordered...wait for it....SALADS... because it's January and everyone is on a diet.  ๐Ÿ™„.  It was so fun and it was great to have lunch and catch up.  I ❤❤these ladies.

Friday night G and I went to dinner.  I got pulled pork nachos.  They were AMAZING!!!!  It was nice having dinner just the two of us :-)

After dinner we went to Ava's basketball game.  It was a great game and her team won after coming from behind on the last quarter.

Saturday I saw TWO movies.  It was so relaxing and a real treat.

I saw Hidden Figures which was an AMAZING movie.  I took Ava and our foreign exchange student Anne and it was such an inspirational movie.  It's unbelievable the racism and sexism these women had to overcome.  I hope this film gets nominated for an Oscar.

We also went and saw LaLa Land which was another great movie.  It was a musical and it was SO good.  I'm so glad we got to see it!

This morning Grandma Jan took me out for a birthday breakfast. Ava and Anne went too and it was delicious.  I'm glad I got to celebrate with her.

It's been a great weekend!

Happy birthday Brock!!!

Today our boy turns 19!   Brock has been our greatest blessing and I'm so proud of the young man he has turned out to be.   He is hardworking, dedicated and caring and he goes after his goals 110%.

This fall he is traveling to Arizona to work and explore and to figure out what he wants to do in this big world of ours.  It is scary for me but he is SO excited to go and see a different part of the country.  I hope that he comes home with a clear vision of what he wants for his future.

Last year he celebrated his 18th birthday by jumping out of a plane.

This year the celebration won't be as exciting :-). We are going to have dinner and cake and celebrate his last year of being a teenager.  We love you Brock!!
